It’s apple season! Have you picked any apples yet? I took a break from our beloved, go-to breakfast, the Dutch baby pancake, but since we picked some fresh honey crisp apples a few weeks back, I’ve been making Dutch babies left and right. Wow, that’s fun to say, ha! Anyway, this recipe is refined sugar-free, uses spelt flour, and requires minimal ingredients and minimal time. Keep reading to see my easy Dutch Baby Pancake recipe.

Dutch Baby Pancake Recipe (Refined Sugar Free)

What is a Dutch baby, you ask? You can read more about the origins of a Dutch baby here, but let’s get to the recipe.It takes around five minutes to mix up the batter, and only requires one bowl! I try to make all of my recipes for my family free of refined sugars so you’ll see that I used coconut sugar or maple syrup to sweeten. I also top with a tiny bit of maple syrup or you could whip up some heavy cream.

Why do I love the Dutch Baby pancake?

Not only is this recipe quick to make, it has more protein than a traditional pancake. Since the base of this recipe is eggs, and almost the same amount of flour it isn’t super grain-heavy. I prefer a protein-heavy breakfast so this is a nice compromise when my girls ask for something on the sweeter side. You can definitely taste the eggs, so if eggs aren’t your thing, this may not be the recipe for you.

I love that you can really make this recipe with any milk, flour, and fruit you have on hand. As long as you have eggs and the main ingredients, you can switch out the flour to be grain-free (like almond or coconut flour), and you can use any milk, plant or not.

Lastly, I love this recipe with apples, but we make a blueberry version that is pretty divine too.

Dutch Baby Pancake Recipe (Refined Sugar Free)

My take on a refined sugar-free, spelt flour Dutch baby pancake. Requires minimal time and minimal ingredients recipe for a quick and delicious weekday or weekend breakfast.
Servings 4

Ingredients
  

  • 1 tablespoon pastured butter or coconut oil
  • 4 pastured eggs
  • 3/4 cups milk (can use plant milk, cow milk, raw milk etc.)
  • 1 teaspoon cinnamon
  • 1 tablespoon coconut sugar or maple syrup
  • 1 teaspoon vanilla extract
  • 3/4 cups spelt flour (can sub a paleo flour)
  • 1 apple, sliced (or another fruit like blueberries or blackberries)

Instructions
 

  • 01. Begin by preheating the oven to 450 degrees F.
  • 2. Place a large cast iron skillet in the oven to pre-heat.
  • Whisk together all ingredients except butter/coconut oil and fruit in a large bowl until well-combined.
  • Take skillet out of the oven and add the butter/coconut oil to it to melt. (Be careful, it will be hot!)
  • Pour the pancake batter into the skillet and top with the slice apples or other fruit.
  • Bake for 15-17 minutes until golden brown! I slice into pizza-style slices and serve with a bit of maple syrup.
