This vegan blueberry oatmeal bake recipe is my favorite breakfast of all time. It’s fairly easy to make, and the best part is it’s completely dairy-free, egg-free, and refined-sugar free. Whip it up, store it in the fridge, and bake it in the morning! You (and your family) will love it!

Vegan Blueberry Oatmeal Bake Recipe

A few important notes about this recipe. I usually make one batch of this in a 9 x 9 pan and it lasts around 2-3 days for my two girls and I. You could easily double this to make breakfast for the whole week, as it really does save well. We also eat it hot or cold! It’s very yummy cold with plant milk poured over it!

Vegan Blueberry Oatmeal Bake Recipe

*Serves 2-3 (double if making in a larger, cake-size pan!)

Ingredients:

  • 2 flax eggs (2 tablespoons flaxseed mixed with 6 tablespoons warm water)

Blueberry Mixture Ingredients

  • 1 package organic wild frozen blueberries (a small package – about 2 cups)
  • 1 tablespoon chia seeds

Dry Ingredients:

  • 3 cups organic rolled oats (I use One Degree Organics – they’re glyphosate free!)
  • 1/2 cup organic whole wheat flour (I also use One Degree Organics Whole Wheat or Spelt Flour)
  • 1/2 cup coconut sugar
  • 1/2 teaspoon pink salt
  • 1 teaspoon organic cinnamon

Wet Ingredients:

  • 1/2 cup organic peanut butter or organic almond butter
  • 3 tablespoons organic coconut oil
  • 2 tablespoons organic maple syrup
  • 2 teaspoons vanilla extract

Method:

  1. Preheat oven to 350 F.
  2. Get your 9×9 pan ready. Either lightly grease or put in parchment paper.
  3. Prepare your flax eggs in a small bowl to thicken.
  4. Prepare your blueberry filling in a separate small bowl by mixing the chia seeds and organic wild blueberries. Let sit.
  5. Mix together your dry ingredients in a large bowl.
  6. Mix together your wet ingredients in a separate bowl.
  7. Combine the wet and dry ingredients (but leave the blueberry mixture be… it goes in later!)
  8. You should have one big bowl of your oat mixture and a smaller bowl with the blueberry + chia seed mixture.
  9. In a 9×9 pan, pour half of the oat mixture, and flatten.
  10. Pour the blueberry mixture on top.
  11. Pour the rest of your oat mixture on top of that.
  12. Bake at 350 for 25-30 minutes. Oats should be brown on top.
  13. Serve hot or cold. Enjoy!
