As a young child in Southern California, I grew up eating tortilla soup! The flavors of tortilla soup are unlike any other! I knew that when we went plant based we needed to find a good recipe! It’s extremely easy to make, only takes a few minute, and one pot. Keep reading to see how to make easy vegan tortilla soup!

Easy Vegan Tortilla Soup

This soup is packed full of healthy, whole foods! The black beans and pinto beans provide protein and fiber. The avocado provides healthy fats, the garlic is a wonderful anti-inflammatory food, and the fresh cilantro gives this dish a flavor that’s truly out of this world!

It’s also extremely easy to sub out certain veggies or beans for the carrots, potatoes, and lentils! I’ve seen this made with jackfruit, and I really want to try that next! Use what you have on hand if you’re missing something. I guarantee this will turn out delicious either way. I hope you enjoy!

Ingredients:

  • 1 small white onion, diced
  • 2 cloves garlic, minced
  • 1.5 cups frozen corn
  • 1 can black beans (or 1 cup cooked)
  • 1 can pinto beans (or 1 cup cooked)
  • 1-2 small chipotle peppers in adobo sauce, loosely chopped (reduce or increase to preferred spice)
  • 2 tsp ground cumin
  • 1/2 tsp sea salt
  • 5 cups water
  • 2 tbs. veggie bullion paste
  • optional: cilantro, avocado and/or lime for serving

Method:

  1. In your big soup pot, cook your garlic and onion in about 2 tablespoons of water. I do this for around two minutes.
  2. Add the frozen corn and cook for 5 minutes. I add a bit of salt and pepper at this step.
  3. Add the veggie bullion paste and 5 cups of the water.
  4. Then add in the pinto and black beans and adobo peppers. Bring it all to a boil.
  5. Once boiling, turn it down to a simmer. Let it simmer for about 20-25 minutes.
  6. Do a taste test to see if there’s enough salt to your liking. Serve and enjoy!
