My girls love snacks. They’re constantly asking if we can bake together. I love baking, but I don’t love added sweets in the house. I’ll eat them all if I’m not careful, and I don’t want to overload my girls with sugar either. Therefore, I needed an easy, no-bake recipe with minimal ingredients to make with my girls. Behold, the no bake peanut butter chocolate chip energy bites! Keep reading to see how to make them!

No Bake Peanut Butter Chocolate Chip Energy Bites Recipe
These no-bake peanut butter bites are a staple snack for our family. We keep the ingredients needed for them on hand at all times. My husband loves them probably more than my girls! They have a rich peanut buttery flavor that’s divine when paired with oats and maple syrup. When you pair these with coffee they’re out of this world! These no-bake oat bites delicious as a topping in some almond-milk yogurt or even on their own with some cashew milk for breakfast too!
Ingredients:
-
1.5 cups organic oats (we love the One Degree brand)
- 1/2-1 cup cup of creamy peanut butter (make sure to get one without sugar in it)
- 2 tbs. maple syrup
- chocolate chips
- 1 tbs. of chia seeds
- 1tbs. of flax seed
Method:
- Mix all ingredients in a large bowl. You may need more or less peanut butter depending on what you add in, just make sure you coat the mixture well. You want enough PB to make it all stick together. This recipe is VERY forgiving, and you can add nuts, seeds, whatever you need and it will taste amazing!
- Roll into balls. Makes about 12. Or in a silicone mold tray (this is a pumpkin one!)
- Allow to cool in the refrigerator for 30 minutes to an hour.
- Enjoy!
