Taco Tuesday hadn’t quite ever been the same for me since going vegan. I love beans and usually those were my go-to in place of taco “meat” but sometimes it’s nice to try and find a replica of those nostalgic foods. This taco meat resembles the junky Taco Bell meat without the yucky ingredients. Plus, it’s made from walnuts, so it’s actually quite good for you! Vegan Walnut Taco Meat Recipe

This recipe is baby + kid approved (my 4 and 1 year olds loved it), and even omnivore husband approved! Yep. My husband was super into these tacos. This taco meat recipe would be wonderful in a vegan crunch wrap too. Don’t you think?

Ingredients:

  • 2 cups raw walnuts (organic when possible)
  • 1/4 cup water
  • 1 tbs. nutritional yeast (we love this non-fortified one)
  • 2 tbs. taco seasoning (we use a pre-made one from Whole Foods bulk spice section but I would use chili powder, onion powder, garlic powder, cumin and paprika in place of it if I couldn’t find it in bulk).
  • salt to taste

Method:

  1. Pulse just the walnuts in a food processor until they’re ground up completely. You want them in very small bits. (Similar to the consistency/texture of “beef”).
  2. Add in the water, nutritional yeast, and taco seasoning.
  3. Heat in oven for 10 minutes at 350 F.
  4. Serve in warm tortillas (we love Siete Grain-free tortillas), with lettuce, tomato, and guac.
  5. Enjoy!
