Easy Breakfast Quinoa-Filled Waffle Bowls

These bowls are a fun take on traditional waffles. My girls love eating them like triangles with peanut butter or any nut butter, dipped in pure maple syrup! I used to make my own waffle batter, and sometimes still do! I have a yummy buckwheat waffle recipe that I use instead of the waffle mix sometimes, but I know motherhood has seasons where convenience is key.

Also, I always make the whole package of waffle mix, then save the rest for another day that week. These waffles are yummy reheated too! This way I’m only pulling out the waffle iron once a week, ha!

Makes 6-8 waffles

Ingredients:

  • 1 package classic Birch Benders pancake/waffle mix
  • Water or plant milk (per package instructions)
  • Avocado oil (optional)
  • 2 cups cooked quinoa, cooled (I usually make the night before)
  • Nut butter (we love Nuttzo)
  • Fresh fruit, sliced
  • Pure maple syrup
  • Hemp hearts and/or chia seeds

Method:

  1. Plug in your waffle iron! I use this one.
  2. Place your Birch Benders waffle mix in a big bowl. Add the appropriate amount of plant milk/water (I think I typically use around 2 cups, but check the directions!)
  3. Add your cooled quinoa. Mix well.
  4. Spoon your waffle batter onto iron to cook waffles. Repeat until all the mix is gone!
  5. Assemble the bowls. I start with the waffle triangles as the base with some nut butter spread on top. Top with fresh fruit (I used blueberries and bananas this time.) Top with “sprinkles” as my girls call it. AKA: hemp hearts and/or chia seeds!
  6. Drizzle a bit of maple syrup on top and serve and enjoy!
