I shared these vegan pulled pork sandwiches on my feed this past week and so many of you asked for the recipe. I have to admit, I am usually bad about measuring exact ingredients. I kind of just experiment, but I know you guys love trying these recipes too, so hopefully they’re as delicious for you as they were for our family! Vegan Pulled Pork Sandwich Recipe

Keep in mind, these are not pork. So they won’t taste exactly like the smoky meat you’re used to from before. It has been so long since I ate BBQ so I honestly have no idea what the meat version tastes like, and I was very excited to have the texture and tastiness of the vegan version!

Vegan Pulled Pork Sandwich Recipe

This recipe makes 2-4 sandwiches (depending on how big your buns are), and we usually double it for our family of four and have leftovers. We also served them with onion rings this time, and I put one of the rings on the sandwich. It definitely took it up to a whole new level! I love these served with homemade sweet potato string fries too!

Ingredients:

  • 1 can jackfruit, rinsed and pulled
  • 1 cup shredded carrots (I buy them pre-shredded)
  • 3/4 cup BBQ sauce of choice
  • 1 tsp. smoked paprika
  • Salt and pepper to taste
  • burger buns
  • 1-2 mashed avocados (for on sandwich)

Method:

  1. Open jackfruit can and rinse each piece under running water, removing any hard/tough parts, and then shred the softer flesh by hand into a big bowl.
  2. In the bowl, add the BBQ, salt, pepper, and smoked paprika. Mix well.
  3. You can either heat it in a pan, covered, until warm and/or carrots are soft. OR put in the oven, covered, at 375° F until warm. I also heat the buns up during the last five minutes of cook time. The oven is our preferred method at this phase in life!
  4. Assemble sandwiches with mashed avocado, salt and pepper, and extra BBQ sauce.
  5. Serve and enjoy!
