There are minimal ingredients, and they’re extremely versatile. Taking only 30 minutes from start to finish, these make the perfect breakfast cookie. Keep reading to see how you make them.

Vegan Pumpkin Chocolate Chip Breakfast Cookies Recipe

These cookies are super moist. They don’t bake very long, but crisp just enough on the outside to be a tiny bit crunchy with an earthy peanut butter taste, and soft and gooey on the inside like a traditional chocolate chip oatmeal cookie.

I store these in the fridge if we have leftovers and reheat for 5 minutes in a 350 degree oven. They’re also delicious cold though. In fact, my three-year-old prefers them cold!

Ingredients:

  • 1 box (or can) of organic pumpkin puree (NOT pumpkin pie puree)
  • 2 tbs. maple syrup
  • 1/2 cup of creamy peanut butter (make sure to get one without sugar in it)
  • 2 tbs. coconut oil
  • 1 cup organic oat flour
  • 1.5 cups organic rolled oats (we really like sprouted oats!)
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1 tsp. cinnamon
  • 2/3 cup non-dairy dark chocolate chips (we use the Enjoy Life brand)

Method:

  1. Preheat oven to 350 degrees F.
  2. Begin by combining all wet ingredients (first four on list) in a mixer (or in a mixing bowl) and whisk together until well-mixed.
  3. Add in dry ingredients (except chocolate chips) one at a time, and mix until well-combined.
  4. Add in dark chocolate chips. Fold into mixture.
  5. Take a 2 tbs. scoop and spoon them onto a cookie sheet.
  6. Bake for 15 minutes, then let cool for 10.
  7. Eat and enjoy!
