I’m super excited to share my current go-to smoothie recipe! It’s packed full of protein, nutrients, healthy fats, and even iron. The best part? My toddler is obsessed and drinks a ton with me. Keep reading to find out what’s in this protein-packed blueberry cauliflower smoothie!
Protein-Packed Blueberry Cauliflower Smoothie
This smoothie contains super good-for-the-body ingredients. With things like walnuts and their healthy fats, leafy greens full of iron and folate, anti-oxidant rich blueberries, protein-packed nut butter, and potassium-filled dates, you’re bound to feel the benefits of starting your day with one of these! I love the cauliflower because it acts as an ice cube, while providing some nutritional value.
I also love that I can hide all kinds of superfoods in her, like blackstrap molasses (which is an amazing source of iron, Vitamin B6, calcium, and magnesium) and fiber-rich, and Omega-3 rich foods like chia seeds and flaxseed. The possibilities are endless, and depending what I have on hand, I’ll switch out different ingredients while trying to keep these superfoods included.
EASY, HEALTHY SMOOTHIE RECIPE
With all of the health benefits you’ll receive from drinking one of these bad boys, there really isn’t a downside. Other than that you’ll feel super full and satisfied after! Also, keep in mind that I make a giant smoothie, I mean GIANT because I drink a whole jar full as my breakfast, and Grace has a good 1-2 cups in her smoothie cup! You can cut these ingredients in half or multiply if you need more!
Ingredients:

1/2 cup frozen cauliflower

1/2 cup frozen blueberries

1 cup fresh organic spinach
- 1-2 frozen banana
-
2 tbs. peanut butter (or sub sunflower butter if nut free)

2 tbs. organic walnuts
-
1 tsp. cinnamon
-
3/4 cup plant-based milk (I like Califia Farms or The New Barn)

3-4 pitted Medjool dates
- 1 tbsp. chia seeds and/or flaxseeds
- 1 tsp. blackstrap molasses
Method:
- Combine all ingredients into your blender.
- Blend until smooth.
- Optional: Add some frozen blueberries or almond butter for topping.
- You can drink out a of a reusable smoothie straw or eat it with a spoon from my favorite wide-mouth Weck smoothie jar. Enjoy!
