It’s no secret that I’m a juice fiend. There’s something about a freshly blended  juice in a mason jar that helps wake me up in the morning. The sweetness of carrot + apple combined with the bite that the ginger gives is a better zing than a cup of coffee. (Yes, I said it.)

The truth is, I feel better when I drink juice. I also feel better when I eat healthier. Eating a vegan diet for over a year has completely changed the way I view food. I crave healthy items like legumes, nuts, and fresh fruits and veggies. I do get my fair share of sweets, but I’ve become a master at finding delicious and healthy options for sweets too. Smoothies and juice are my go-to for that.

Fresh Carrot, Apple, and Ginger Juice

Ingredients:

  • 1 carrot, peeled
  • 1 apple, cored
  • 1 piece of ginger, peeled
  • 1 cup water
  • 1/2 cup of ice
